Hey guys! Today I perfected the most delicious Tom Yum Soup recipe for you all. This recipe is absolutely mouth watering and reminds me of my favorite Thai restaurant. Tom Yum soup is a type of hot and sour soup typically made with shrimp. I prefer to add tofu to mine but you can go ahead and add your favorite seafood. I absolutely love the combination of the spices with the tanginess from the tomatoes. On a cold or rainy day, this soup is a complete hit!
Now for the Tom Yum paste, I prefer to use the brand Dragonfly because it perfectly captures all the flavors and is vegetarian. I definitely recommend checking out your local Asian mart to see what they have in stock or you can purchase the paste I use in this recipe from Amazon. I love my soup on the spicier end so I added in extra chopped Thai chillies for the extra kick of spice but the great about this soup is that you can control how spicy you want it to be. Ingredients
5 cups water
2-3 Thai chilies, chopped
5-6 lemon grass stalks, 1 in.
2 tomatoes, large chunks
6-7 white mushrooms, large chunks
5-6 tbsp Tom Yum paste
1 tbsp red crushed pepper
Optional: fresh garlic leaves
Instructions
1. In a large pot, boil the water with the lemon grass stalks.
2. Once the water has come to a boil, add in the tom yum paste and stir.
3. Add in the Thai chillies and red crushed pepper. (You can add in more according to spice level)
4. Let the soup boil for around 15 minutes to allow flavors to blend.
6. Add the vegetables when you are ready to eat as they tend to dissolve quickly if you add them in earlier.
7. Top with fresh garlic leaves and enjoy.
