Tom Yum Fried Rice

OMG you guys!! I think I might have just done something with this because let me just say this dish is so DANG DELICIOUS! Why did I never think of this before?? OH man! You guys are in for a real treat! This is basically Tom Yum in Fried Rice form. I used to same Tom Yum paste that I used in my Tom Yum Soup recipe for this dish as well. I HIGHLY recommend buying that paste and I will link it below for you all. It is more expensive on Amazon so if you have any Asian market near you, go there instead.


You can add any veggies you love to this dish or any meat! I think chicken would taste absolutely great in this! The tom yum paste is strong so you won't be needing much, just around a spoon or so. UGH my mouth is watering thinking about it as I am writing this post. I gotta make it again tonight LOL! I would love to see your guys pictures when you make it! ENJOY!!

Ingredients


3 cups cooked Jasmine white rice


2 tomatoes, large cubes


1 carrot, sliced


1 green bell pepper, sliced


1 red bell pepper, sliced


2 heads bok choy, large slices


5 spring onions, julienned


1 cup firm tofu, large cubes


2 dried red chili


5 cloves garlic, minced


1 serrano pepper, minced


1 in. ginger, grated


2 tbsp Tom Yum paste


3 tbsp soy sauce


1 tbsp Sambal chili garlic paste


Instructions


1. Grill the tofu cubes until they are are crispy on all sides. Set aside for later.


2. In a wok or large pan, heat up 1 tbsp oil. Quickly sauté carrots and bell peppers for around 2-3 minutes on medium heat. Next, add in garlic, serrano pepper, ginger, and dried red chili's and sauté for another 1-2 minutes.


3. In medium to low heat, add in the soy sauce, chili garlic paste, and Tom Yum paste. Stir well and add in the grilled tofu.


4. Toss in the spring onions and bok choy. Stir this for around 2 minutes. Bok Choy cooks fast so keep a close eye.


5. Turn up the flame to high heat and add in the cooked white rice. Stir well and be gentle when mixing as the rice can break easily. Finally, add in the tomatoes and toss them around gently. Be sure to add these after the rice as the tomatoes will get overcooked or mushy.


6. Serve the rice with curry or by itself. Enjoy!!
