Tandoori Chicken with Mint Chutney

YAY! My first non-vegetarian dish is finally here! I am so excited to share this absolutely delicious pan fried chicken dish that goes perfectly with my favorite yogurt mint sauce. The chicken can also be substituted for paneer! This dish requires very minimal chopping and is super easy! I love adding the tandoori chicken into wraps and salads. You can also eat this with rice and create a more filling dish. You can serve this up as a yummy appetizer for those summer parties. The best thing about this dish is you can let the chicken marinate as long as you would like. Marinating these wings in yogurt makes them super juicy and the tandoori masala gives them a great color. Make sure to use full fat yogurt so the marinade is thick. It serves as a perfect weeknight dinner for those long busy work days. The yogurt mint sauce is super refreshing and light! You can use this as a dressing in a salad as well! This chicken was so DAMN GOOD! I cannot wait to see you guys recreate this recipe! Enjoy!!

Ingredients
Marinade:
3 lbs chicken breast
1/3 cup whole milk yogurt
3 tbsp Badshah Tandoori Chicken Masala
2 tbsp minced garlic
1 tbsp chaat masala
1 tbsp garam masala
1 tsp cumin powder
2 tbsp red chili powder
1 1/2 tsp salt
1 tbsp oil
Yogurt Mint Sauce:
1 cup whipped whole milk yogurt
2 tbsp finely chopped mint
1/4 tsp salt
1/2 tsp sugar
Garnishes:
Sliced onions
Lime wedges
Instructions
1. Chop the chicken breast into large cubes. Add that to a mixing bowl. Then add yogurt, tandoori masala, cumin powder, chili powder, chaat masala, salt, minced garlic, and oil. Mix well and cover the bowl.
2. Let the marinade rest in the fridge for a minimum of 30 minutes.
3. On a medium flame, add the chicken and marinade. Slowly let that cook for 10 minutes, carefully flipping the chicken over every 2-3 minutes. Make sure to keep the pan covered with a lid. After about 10 minutes, increase the heat to high and let the marinade evaporate and burn off. This should create a nice and crispy skin on the chicken. If you like the gravy, just cook the chicken for around 10-12 minutes.
4. For the yogurt mint sauce, whip together the yogurt, mint, salt, and sugar.
5. Add your garnishing and sauce to your plate, and you are ready to serve! Enjoy!!
