Spicy Thai Mango Salad

You guys have to try this spicy Thai Mango salad! It's filled with a burst of flavor from simple ingredients that you have right at home. Now if you've ever been to a Thai restaurant and have never tried an authentic mango salad, oh my gosh stop right here and go head to a local place near you! My favorite in SoCal is this gem in the heart of Los Angeles called, Araya's Place. I could go on and on about this restaurant but I will let their food speak for itself. My love for mango salad stems from this vegetarian restaurant and I have perfected this recipe for you all to try at home!


For this recipe, I would recommend green mangos that are just about to become ripe. You want to capture that perfect balance between the tang and sweetness from the mango. I also love the taste of fresh tamarind blended right at home rather than purchasing a paste from a store. Apart from that, you can find the rest of the ingredients for the dressing at your local grocery store and adjust the spice levels to your preference! Enjoy this fresh salad!

Ingredients


2 semi-ripe mangoes, julienned


3 persian cucumbers, julienned


2 tomatoes, julienned


1 carrot, julienned


1/4 cup cilantro, chopped


3 Thai chillies, minced


1/4 cup roasted chashews


Dressing:


2-3 garlic cloves, grated


4 tbsp soy sauce


5-6 tbsp tamarind juice/paste


3 tbsp rice wine vinegar


1/2 lemon squeezed


3 tbsp red crushed pepper


Salt to taste


Instructions:


1. In a large bowl, mix together mangoes, cucumbers, tomatoes, carrot, cashews, cilantro, Thai chili


2. For the dressing, mix together grated garlic, soy sauce, tamarind juice, rice wine vinegar, lemon juice, and red crushed pepper. Add salt to taste.


3. Mix dressing and salad together. Enjoy!
