Spicy Garlic Noodles

Now if you know me, you know I absolutely love my noodles. So it was quite clear to me that this had to be my first recipe post. The beauty with noodles is that you can pretty much add any of your favorite toppings or sauces. This recipe calls for simple household ingredients to create a spicy and garlicky dish. As far as the noodles go, I chose to use fettuccine because quite frankly I ran out of my favorite asian noodles. You can choose to use ramen, soba noodles, or even spaghetti.



Ingredients


1 box of Fettuccine


2 tbsp unsalted butter


1 serrano pepper, chopped


6-7 cloves of garlic, minced


1 tbsp ginger, grated


1/2 white onion, sliced


5-6 spring onions, chopped


4 tbsp soy sauce


3 tbsp dark soy sauce


1 tbsp rice wine vinegar


1 tbsp Sambal chili garlic paste


1 tbsp red crushed pepper


Instructions


1. Cook your choice of noodles according to the package instructions. Be sure to reserve some of the noodle water for the sauce.


2. On low heat, melt the butter and add in the garlic, serrano pepper, and ginger.


3. Sauté for 3-4 minutes and add in the white onion and let that cook for 2-3 minutes.


4. Toss in the soy sauce, dark soy sauce, rice wine vinegar, red crushed pepper, and chili garlic paste.


5. Add in the boiled fettuccine and around 1/3 cup of the pasta water.


6. Mix well and toss in spring onions as a finishing touch. Enjoy!
