Mexican Black Bean and Corn Burgers with Queso

This super delicious burger recipe calls for homemade patties with a spicy queso to top it all off. There's nothing like a juicy veggie patty with fresh crisp toppings on a buttery toasted bun, paired with fries or potato wedges. This veggie patty is delicious on its own, full of Mexican flavors. You can even opt for a healthy meal and top this patty off on a salad! Now this queso is super easy and full of spice! It serves as the perfect topping for your new favorite burger recipe. And to make this recipe even more delicious, I love adding my very own fresca sauce to even out all the flavors!


Now for the queso, I use canned Nacho Cheese as a base to build up the flavor. You can totally use your favorite nacho cheese or even attempt to start from scratch! And as for the green fresca sauce, I prefer using sour cream but you can substitute for greek yogurt, mayonnaise, or even home-made yogurt! Top this burger off with your favorite toppings and enjoy! Warning: This might become your favorite burger recipe!




Serving Size: 5-6


Ingredients


Patties:


3 cups cooked black beans



1/4 cup green bell pepper


1/2 cup white onion


1 serrano pepper, chopped


1/3 cup fresh green garlic



2 tbsp cumin coriander powder


2 tbsp lemon pepper


Salt to taste


Fresca Sauce:


1/2 cup soup cream


1 cup cilantro


2 serrano peppers


3 tbsp fresh green garlic


1/2 lemon, juiced


1 tbsp cumin coriander powder


Salt to taste


Spicy Queso:


1/2 tbsp olive oil or oil of your choice


1 can Nacho Cheese


1/4 cup white onion, chopped


1/2 serrano pepper, chopped


1/3 cup milk


3 tbsp taco seasoning


2 tbsp red chili powder



Instructions:


1. Mash together black beans and add in street corn, bell pepper, white onion, serrano pepper, green garlic, taco sauce, cumin coriander powder, lemon pepper, salt. Mix well.


2. Shape the patties according to bun size and set aside.


3. For the fresca sauce, blend together sour cream, cilantro, serrano pepper, green garlic, lemon juice, cumin coriander powder, and salt. Set side for later.


4. In a pan, heat up 1/2 tbsp olive oil and add in white onion and serrano pepper. Let that cook until onions are translucent on low heat. Add in can of nacho cheese and slowly add in milk to help thin out the queso. Then add in taco seasoning and red chili powder. Stir queso on low heat till warm.


5. Cook patties on medium heat on both sides and toast buns of choice. Assemble patties with fresca sauce, queso, and your favorite toppings such as lettuce, jalapeños, tomatoes, and onions. Enjoy!
