Mediterranean Lavash Wraps with Chickpea Fritters

Here's a healthy and veggie filled recipe for you all! I absolutely love mediterranean food especially considering it is such a healthy diet. This lavash wrap can be customized any way you like from the veggies to the dressing! You could even add some quinoa to this for extra protein or chicken. The lavash bread from Trader Joe's is an absolute favorite of mine but if you can get your hands on some fresh bread from a Middle Eastern bakery, I definitely recommend that.


Now the chickpea fritters are super quick and easy! If you have not already bought an air fryer, I recommend you all purchase one right now! The air fryer is a healthier alternative to frying your food in oil. I purchased mine from Costco and I love it! However, you can definitely bake them or fry them, it's your choice! You can add these fritters to salads or just munch on them with the home-made Tzatziki I share in this recipe. I hope you guys enjoy making this super yummy dish, enjoy!!

Ingredients


1 pack of lavash bread


Hummus of your choice


Salad Mix:


2 cups romaine, chopped


2 cups spinach, chopped


1 carrot, shredded


1 tomato, sliced


1/2 cucumber, julienned


1/4 cup kalamata olives, sliced


Vinegar Onions:


1 white onion, sliced


1/3 cup white vinegar


1/2 tsp salt


Tzatziki:


1 cup sour cream


1/4 cup mint leaves, chopped


2 Persian cucumbers, shredded (remove water)


1/2 lemon, squeezed

1 tsp olive oil


Salt per taste


Chickpea Fritters:


1 can chickpea, drained & washed


1/2 cup gram flour or all purpose flour


2 cups cilantro


1 cup spring onion


2 serrano peppers


1 lemon, squeezed


Salt per taste



Instructions


1. For the salad mix, combine romaine, spinach, carrot, cucumber, tomato, and kalamata olives. Allow vinegar onions to soak for around 10 minutes. Then add that into the mix.


2. For the tzatziki, mix sour cream, cucumbers, mint, olive oil, lemon juice, and salt. Set aside for later.


3. For the chickpea fritters, blend together can of chickpeas that are drained and washed, cilantro, spring onion, serrano peppers, lemon juice, and salt. Blend until all ingredients are finely chopped. Once blended, remove into a large bowl and add in the gram flour or all purpose flour and mix well.


4. If using an air fryer, place wax paper to line the tray and put spoon sized chickpea batter onto the paper. Next, turn on air fryer to 350 degrees for 9 minutes. After the initial 9 minutes, rotate the fritters and cook for another 9 minutes. If you would like to bake them, set oven to 375 degrees for around 10-12 minutes. Cook at an additional time if needed.


5. Heat up lavash bread. Spread hummus over lavish bread, then add salad mix. Next, add the chickpea fritters and drizzle the tzatziki all over. Roll up the wrap and cut in half. Enjoy!
